Here’s a simple and delicious recipe for Pan-Seared Cod Loins with Lemon Butter Sauce:


– 4 cod loins (about 6 ounces each)
– Salt and black pepper to taste
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1/4 cup chicken or vegetable broth
– Juice of 1 lemon
– 2 tablespoons unsalted butter
– 2 tablespoons chopped fresh parsley (for garnish)
– Lemon slices (for garnish)


1. Pat the cod loins dry with paper towels and season both sides generously with salt and black pepper.

2. In a large skillet, heat olive oil over medium-high heat. Once the oil is hot, add the cod loins to the skillet, making sure not to overcrowd the pan. Cook the cod for about 3-4 minutes on each side, or until golden brown and cooked through. The flesh should easily flake with a fork when done. Remove the cod from the skillet and set aside on a plate.

3. In the same skillet, add minced garlic and cook for about 1 minute until fragrant.

4. Pour in the chicken or vegetable broth and lemon juice, scraping up any browned bits from the bottom of the skillet.

5. Reduce the heat to low and add the butter to the skillet. Stir constantly until the butter is melted and the sauce is smooth and slightly thickened.

6. Return the cod loins to the skillet, spooning the lemon butter sauce over the top. Cook for an additional minute or until the cod is heated through.

7. Remove the skillet from the heat and garnish the cod with chopped fresh parsley and lemon slices.

8. Serve the pan-seared cod loins hot, accompanied by your favorite side dishes such as steamed vegetables, rice, or roasted potatoes.
